These Easy French Dip Sliders are a perfect appetizer or meal, featuring tender roast beef and melted provolone cheese tucked inside soft sweet rolls, topped with caramelized onions and baked to golden perfection. Served warm with savory homemade au jus, they are perfect for gatherings, game days, or a comforting snack.

Ingredients

For the Sliders

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

For the Butter Glaze

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

For the Au Jus

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt 3 tablespoons of unsalted butter. Add the thinly sliced onion and coat them well with the butter. Cook, stirring occasionally, for 12 to 15 minutes until the onions become soft and browned without burning.
  2. Season the Onions: Add 2 teaspoons minced fresh thyme, 1/4 teaspoon kosher salt, and 1/4 teaspoon black pepper to the caramelized onions. Stir to combine, then remove the skillet from heat and set aside.
  3. Slice and Prep Rolls: Preheat the oven to 350°F (175°C). Take the 12 sweet rolls out of the package keeping them intact, then slice horizontally to separate tops and bottoms. Arrange the bottoms cut side up in an 11×7 inch baking dish.
  4. Layer Cheese and Beef: Place half of the 10 slices of provolone cheese evenly over the roll bottoms, then layer with all 14 ounces of sliced deli roast beef. Spread the caramelized onions evenly on top of the beef, then add the remaining cheese slices. Cover the sandwich with the roll tops.
  5. Brush the Butter Glaze: In a small bowl, mix together 1/2 cup melted unsalted butter and 1 1/2 tablespoons dried onion soup mix. Brush this mixture evenly across the tops of the rolls, or pour it carefully to cover.
  6. Bake Covered then Crisp: Loosely cover the baking dish with aluminum foil ensuring it does not touch the tops of the rolls. Bake for 25 minutes. Remove the foil and continue baking for an additional 5 minutes to achieve a browned, slightly crispy top.
  7. Make Au Jus and Serve: While the sliders bake, prepare the au jus by mixing the packet of au jus gravy mix with 3 cups of water according to package directions. Serve the baked sliders warm, garnished with fresh chopped parsley if desired, alongside small bowls of the au jus for dipping.

  • Use sweet rolls for a soft and slightly sweet contrast to the savory beef and butter glaze.
  • Caramelizing the onions slowly brings out their natural sweetness and depth of flavor.
  • For a crispier top, brush the butter mixture twice, once before baking and once after removing foil.
