Refreshing and healthy Watermelon Popsicles layered with creamy coconut yogurt and fresh kiwi puree, perfect for a cooling treat on hot days. These popsicles are naturally sweet, dairy-free, and packed with fruit flavors.

Ingredients

Fruits

  • 3 Cups Watermelon (Cubed)
  • 45 Kiwis (Peeled and Cubed)

Dairy Alternative

  • 3/4 Cup Coconut Yogurt

Instructions

  1. Prepare Watermelon Puree: Cube the watermelon and blend it in a blender or a food processor until smooth to create the watermelon puree.
  2. Freeze Watermelon Layer: Transfer the watermelon puree to popsicle molds and freeze for 3 hours until it begins to set.
  3. Add Coconut Yogurt Layer: Spread a thin layer of coconut yogurt on top of the partially frozen watermelon layer, then return the molds to the freezer for another 1.5 hours to let the yogurt firm up.
  4. Prepare Kiwi Puree: Peel and cube the kiwis, then blend them in a blender or food processor until smooth to create the kiwi puree.
  5. Freeze Kiwi Layer: Pour the kiwi puree over the yogurt layer in the molds, then freeze for 6 hours or until completely solid.

Notes

  • Use ripe, sweet watermelon and kiwis for the best flavor.
  • If you don’t have coconut yogurt, you can substitute with any other plant-based yogurt of your choice.
  • Ensure each layer is sufficiently frozen before adding the next to keep distinct layers.
  • To easily remove popsicles, run warm water briefly over the outside of the molds.
  • These popsicles are naturally vegan and dairy-free.
