Watergate Salad is a sweet, fluffy dessert salad featuring instant pistachio pudding, crushed pineapple, mini marshmallows, chopped walnuts, and whipped topping. This classic no-cook dish combines creamy texture with a touch of crunch and fruity flavor, making it a quick and refreshing treat perfect for gatherings or potlucks.

Ingredients

Main Ingredients

  • 1 (3.4 ounce) package instant pistachio pudding mix (dry, not prepared)
  • 1 (20 ounce) can crushed pineapple (with juice)
  • 1 (10 ounce) bag mini marshmallows (divided)
  • ¾ cup chopped walnuts (divided)
  • 1 (8 ounce) tub cool whip (thawed)
  • Maraschino cherries (optional garnish)

Instructions

  1. Mix the pudding. In a large bowl, combine the crushed pineapple along with its juice and the dry instant pistachio pudding mix. Stir thoroughly until the mixture is well combined and the pudding begins to thicken.
  2. Make it fluffy. Add the thawed cool whip to the pudding and pineapple mixture. Gently fold the ingredients together to create a smooth, fluffy texture without deflating the whipped topping.
  3. Add texture and crunch. Carefully fold in 2 cups of mini marshmallows and ½ cup of chopped walnuts to add sweetness and crunch to the salad.
  4. Chill. Cover the bowl with plastic wrap or a lid and refrigerate the mixture for at least 1 hour. Chilling helps the flavors meld and the salad to set.
  5. Garnish. Before serving, top the salad with the remaining marshmallows, the remaining ¼ cup of walnuts, and maraschino cherries if desired. Serve chilled for best taste and texture.

Notes

  • For added texture, you can substitute or add other nuts like pecans according to personal preference.
  • The salad can be prepared a day ahead and refrigerated, making it a convenient option for parties.
  • Using thawed whipped topping is important to maintain the light, fluffy consistency.
  • Optional garnish with maraschino cherries adds a festive look and extra sweetness.
  • Be sure not to overmix after adding the whipped topping to keep the salad airy.
