Ingredients

For the Sweet Potatoes:

  • 2 small (or 1 large) sweet potato, peeled and cubed
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • Olive oil spray

For the Bowls:

  • 1/2 pound ground beef
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp chili flakes
  • 1/2 tsp salt
  • 1 cup cottage cheese
  • 1 avocado, cubed
  • 1/2 tbsp hot honey
  • Chili flakes, to taste

Instructions

  1. Prepare The Sweet Potatoes: Peel and cut the sweet potatoes into small cubes. In a bowl, season them with garlic powder, paprika, and salt. Lightly spray with olive oil, then place in the air fryer basket. Cook at 375°F (190°C) for 15 minutes or until golden and tender, shaking the basket halfway through for even cooking.
  2. Cook The Ground Beef: Heat a skillet over medium-high heat. Add the ground beef along with onion powder, garlic powder, paprika, chili flakes, and salt. Cook the beef, stirring occasionally, until fully cooked through and slightly browned, about 8-10 minutes.
  3. Assemble The Bowls: Evenly divide the cooked sweet potatoes and ground beef between two bowls. Add half of the cubed avocado to each bowl, then top each with 1/2 cup of cottage cheese. Drizzle the bowls with hot honey and sprinkle additional chili flakes to taste for an extra kick.

Notes

  • You can substitute ground turkey for ground beef for a leaner option.
  • Adjust the chili flakes quantity depending on your preferred spice level.
  • If you don’t have an air fryer, roast the sweet potatoes in the oven at 425°F (220°C) for about 20-25 minutes, tossing halfway through.
