Ingredients

Vegetables

  • ½ cup finely chopped onion
  • ½ cup chopped carrots
  • ½ cup chopped red bell pepper
  • ½ cup frozen peas
  • 2 teaspoons minced garlic

Main Ingredients

  • 3 cups cooked white rice (leftover rice is perfect!)
  • 1 tablespoon vegetable oil (divided use)
  • 2 eggs (lightly beaten)
  • 3 tablespoons soy sauce (or more to taste)
  • 1 tablespoon toasted sesame oil
  • Salt and pepper to taste

Optional Garnish

  • Sliced green onions for garnish

Instructions

  1. Heat Oil and Cook Vegetables: In a large wok or skillet, heat 2 teaspoons of the vegetable oil over medium-high heat. Add the onion and carrot, cooking for 3-5 minutes until softened. Stir in the red bell pepper and cook an additional 2-3 minutes. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Season and Remove Vegetables: Season the vegetables with salt and pepper to taste. Remove them from the pan, place on a plate, and cover to keep warm.
  3. Scramble the Eggs: Pour the remaining 1 teaspoon of vegetable oil into the pan. Add the lightly beaten eggs and cook, stirring occasionally and breaking them up with a spatula until scrambled and fully cooked. Season with salt and pepper.
  4. Add Rice and Combine: Add the cooked white rice, reserved cooked vegetables, and frozen peas to the pan. Stir in the soy sauce and toasted sesame oil. Mix gently but thoroughly until everything is evenly combined and heated through, about 3-4 minutes.
  5. Final Seasoning and Serve: Taste and adjust the seasoning with additional salt, pepper, or soy sauce as desired. Serve immediately, garnished with sliced green onions if using.
