A comforting and flavorful Vegan Garlic Chickpea Soup that combines creamy puréed chickpeas with tender potatoes and aromatic herbs. Perfect for a quick, nutritious meal that warms you up in just 30 minutes.

Ingredients

Soup Ingredients

  • 1 Tbsp olive oil, plus more for drizzling
  • 3 large garlic cloves, minced or pressed
  • 1 tsp paprika
  • 1 tsp dried rosemary
  • ½ tsp dried thyme
  • ¼ tsp chili flakes
  • 2 cans (15 oz each) chickpeas
  • 1 (6oz-180 grams) large potato, diced
  • 2 cups (480 ml) low-sodium vegetable broth
  • salt & black pepper, to taste

Instructions

  1. Purée Chickpeas: Pour one can of chickpeas with its liquid into a blender and purée until smooth to create a creamy base for the soup.
  2. Sauté Garlic: Heat olive oil in a pot over medium heat, add the minced garlic and sauté for about 1 minute until fragrant, ensuring it releases its aroma but doesn’t brown.
  3. Add Ingredients: Stir in the puréed chickpeas, drained second can of chickpeas, diced potato, paprika, rosemary, thyme, chili flakes, and freshly cracked black pepper. Mix thoroughly to combine all flavors.
  4. Add Broth & Bring to Boil: Pour in the vegetable broth, stir again, cover with a lid, increase heat to medium-high, and bring the soup to a boil.
  5. Simmer Soup: Once boiling, reduce heat to medium-low and let the soup simmer for 25 minutes, stirring occasionally to prevent sticking and to allow flavors to meld.
  6. Season & Serve: Taste the soup and adjust salt as needed (about ¼ tsp suggested depending on broth saltiness). Serve hot with a drizzle of olive oil and freshly ground black pepper. Enjoy with crusty bread for dipping.

Notes

  • Use low-sodium vegetable broth to control the salt content.
  • Adjust chili flakes to your preferred heat level.
  • Simmering ensures the potatoes become tender and flavors develop fully.
  • For a smoother texture, blend the soup further after cooking if desired.
  • Pairs well with crusty bread or a light green salad for a complete meal.
