Ingredients

Dry Ingredients

  • 1 1/2 cups old fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Add-ins and Toppings

  • 3/4 cup peanut butter chips
  • 3/4 cup Reese’s Pieces
  • 3/4 cup chopped peanut butter cups
  • Flake sea salt, for sprinkling on cookies

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Preheat your oven to 350°F (175°C). Line two large baking sheets with Silpat baking mats or parchment paper to prevent sticking and set them aside.
  2. Mix Dry Ingredients: In a medium bowl, combine the old fashioned oats, all-purpose flour, baking soda, and salt. Stir well and set aside, as this mixture will be incorporated later.
  3. Cream Butter, Peanut Butter, and Sugars: Using a stand mixer or handheld mixer on medium speed, beat the unsalted butter, creamy peanut butter, granulated sugar, and light brown sugar together until the mixture is creamy and smooth. Be sure to scrape down the sides of the bowl with a spatula if needed to ensure even mixing. Then, beat in the egg and vanilla extract until the mixture is well combined.
  4. Add Dry Ingredients and Mix: Gradually add the dry oat and flour mixture into the wet ingredients and mix on low speed just until combined. Avoid overmixing to maintain a tender cookie texture. Next, gently fold in the peanut butter chips, Reese’s Pieces, and chopped peanut butter cups evenly throughout the dough.
  5. Form Cookies and Bake: Scoop out roughly 2 tablespoons of dough for each cookie and place them on the prepared baking sheets, leaving about 2 inches of space between each to allow spreading. Bake for 10 to 12 minutes, or until the cookies are lightly browned around the edges but remain soft in the center.
  6. Finish and Cool: Once baked, remove the cookies from the oven and immediately sprinkle them with flake sea salt. For an extra decorative touch, gently press additional peanut butter chips, Reese’s Pieces, or chopped peanut butter cups on top. Allow the cookies to cool on the baking sheet for about 5 minutes until set, then transfer them to a wire rack to cool completely.

Notes

  • Ensure your butter is at room temperature to help achieve a creamy consistency when mixing.
  • Do not overmix the dough once the dry ingredients are added to prevent tough cookies.
  • Spacing cookies about 2 inches apart allows them to spread evenly without merging.
  • Sprinkling flake sea salt enhances the flavor by balancing the sweetness.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • You can freeze the cookie dough balls for up to 3 months; bake directly from frozen adding an extra 1-2 minutes to baking time.
