Ingredients

Peach Filling

  • 2 bags Frozen peaches (20 ounces each)
  • 1 cup Granulated sugar (white sugar)
  • 1 cup Brown sugar
  • 1 teaspoon Vanilla extract
  • 1/2 teaspoon Almond extract (optional but recommended)
  • 1/2 tablespoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 2 teaspoons Corn starch
  • 1 teaspoon Cream of tartar
  • 1/2 stick Butter (unsalted, room temperature)
  • 2 tablespoons Water
  • 1 teaspoon Fresh lemon juice

Cobbler Topping

  • 2 cups All purpose Flour
  • 1/2 cup Granulated sugar (white sugar)
  • 1/2 cup Brown sugar
  • 2 teaspoons Baking powder
  • 1 tablespoon Cinnamon (reserve 1/2 tablespoon for garnishment)
  • 1 stick Butter (unsalted, cold)
  • 1/4 cup Boiling hot water
  • 1/2 teaspoon Salt

Topping Garnish

  • 3 tablespoons Granulated sugar (to dust top of cobbler)
  • 1/2 tablespoon Cinnamon (reserved from above)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the peach cobbler.
  2. Prepare Peach Mixture: Spray a 9×13-inch baking dish with non-stick spray. Add the frozen peaches, both sugars, vanilla and almond extracts, cinnamon, nutmeg, cornstarch, cream of tartar, butter, water, and lemon juice into the dish. Mix these ingredients thoroughly until well combined.
  3. Bake Peach Filling: Cover the baking dish with foil and place it in the preheated oven. Bake the peach mixture for 20 minutes to allow the flavors to meld and the peaches to soften.
  4. Make Cobbler Dough Base: While the peaches are baking, mix together the all-purpose flour, white and brown sugars, baking powder, salt, and 1/2 tablespoon of cinnamon in a bowl.

  6. Add Hot Water: Pour the boiling water into the flour and butter mixture and stir with a spoon just until combined. The dough should have a drop biscuit consistency.
  7. Top Peach Filling: Remove the peach mixture from the oven and spoon the cobbler dough over the top in golf ball-sized droplets, leaving small gaps between each to ensure thorough cooking.
  8. Sprinkle Cinnamon Sugar: Mix the remaining 1/2 tablespoon cinnamon with the 3 tablespoons granulated sugar and sprinkle this evenly over the dough topping.
