  • 1½ teaspoons lemon zest (from 1 lemon)

Instructions

  1. Even the Chicken Thickness: One at a time, place the chicken breasts in a 1-gallon zip-lock bag; using a meat mallet, pound each breast to an even ½-inch (13-mm) thickness. This ensures even cooking.
  2. Prepare the Marinade and Marinate the Chicken: Mix all marinade ingredients except the chicken together in a 1-gallon zip-lock bag (you can reuse the same bag from pounding if intact). Add the chicken breasts to the bag and massage the marinade into the meat to coat evenly. Seal the bag securely and place it into a bowl to catch any leaks. Refrigerate for at least 4 hours, preferably overnight, to allow flavors to penetrate.
