Ingredients

For the Cinnamon Sugar

  • 1/2 cup packed light brown sugar
  • 1 1/2 teaspoons cinnamon

For the Bread Batter

  • 2/3 cup sugar
  • 1/2 cup salted butter (1 stick), softened to room temperature
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 cup milk
  • 1 1/4 cups peeled and chopped apples (about 2 small Fuji or Granny Smith apples), cut into 2-inch chunks

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan generously with nonstick cooking spray, preferably one containing flour like Baker’s Joy, to prevent sticking.
  2. Make cinnamon sugar mixture: In a small bowl, combine 1/2 cup packed light brown sugar with 1 1/2 teaspoons cinnamon. Set this mixture aside; it will be layered throughout the bread.
  3. Cream butter and sugar: Using a stand mixer or electric hand mixer, beat together 2/3 cup sugar and 1/2 cup softened salted butter until the mixture is smooth and creamy. This step ensures a tender crumb in your bread.
  4. Add eggs and vanilla: Beat in 2 large eggs one at a time, then stir in 2 teaspoons vanilla extract until fully incorporated. This adds moisture and enhances flavor.
  5. Incorporate dry ingredients and milk: Gradually mix in 1 1/2 cups all-purpose flour and 1 1/2 teaspoons baking powder, alternating with 1/2 cup milk. Stir just until combined to avoid overmixing, which can make the bread tough.
