Ingredients

Bar Base

  • 1/2 cup butter, softened (salted or unsalted)
  • 2/3 cup brown sugar
  • 1 egg, at room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp coconut extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup shredded unsweetened coconut (plus extra for topping)
  • 1/3 cup mini white chocolate chips

Lime Frosting

  • 1/2 cup butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 1 tbsp heavy cream or milk
  • 2 tbsp lime juice
  • 1/2 tsp lime extract
  • Food coloring (lime green or a mix of yellow and green)
  • 2 tbsp white chocolate, melted (for drizzling)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, ensuring the paper hangs over the edges for easy removal later.
  2. Cream Butter and Sugar: In a mixing bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy. This creates the tender base texture.
  3. Add Wet Ingredients: Beat in the egg, vanilla extract, and coconut extract until fully combined, which adds moisture and flavor.
  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and shredded coconut. Gradually fold this dry mixture into the wet mixture just until no flour streaks remain.
  5. Incorporate White Chocolate Chips and Bake: Fold in the mini white chocolate chips evenly. Spread the batter evenly into the prepared baking pan and bake for 15-16 minutes until the edges are lightly golden and a toothpick inserted in the center comes out clean.
  6. Cool Bars Completely: Remove the bars from the oven and allow them to cool completely in the pan on a wire rack. This ensures the frosting adheres properly.
  7. Prepare Lime Frosting: In a large bowl, whip together the room temperature butter, powdered sugar, heavy cream (or milk), lime juice, and lime extract until the frosting is light, smooth, and fluffy.
  8. Add Food Coloring: Mix in lime green food coloring or create the ideal frosting color by blending yellow and green food coloring. Stir until the color is uniform.
  9. Frost Bars: Spread the lime frosting evenly over the cooled coconut bars with a spatula.
  10. Drizzle White Chocolate and Garnish: Drizzle the melted white chocolate over the frosted bars using a piping bag, a ziplock bag with a corner cut, or a spoon for thicker streaks. Sprinkle additional shredded coconut on top for garnish.
  11. Slice and Serve: Slice the bars into 16 pieces. For a firmer texture, chill the bars in the refrigerator until the frosting sets. Serve chilled or at room temperature with a glass of milk or your favorite Starbucks coffee for the perfect treat.

Notes

  • Ensure the egg is at room temperature for better mixing and texture.
  • Use unsweetened shredded coconut to avoid extra sweetness and maintain balance.
  • If white chocolate chips are not available, chop white chocolate into small pieces as a substitute.
  • Adjust the lime juice and extract to your taste preference for more or less tartness.
  • For thicker frosting, add more powdered sugar; for thinner, add a bit more milk or cream.
  • Bars can be stored in an airtight container in the refrigerator for up to 5 days.
  • Bring bars to room temperature before serving if chilled, to enhance flavor and texture.
