Spider Web Brownies are a decadent twist on classic fudge brownies, featuring a creamy cream cheese filling artfully swirled into a web pattern on top. Perfect for Halloween or any special occasion, these brownies are rich, moist, and visually impressive, combining the fudgy texture of brownies with the smooth tang of a peppermint-infused cream cheese swirl.

Ingredients

Brownie Batter

  • Batter for one batch Fudge Brownies (prepared according to your favorite recipe)

Cream Cheese Swirl

  • 1/2 of an 8-ounce package (113g) cream cheese, at room temperature
  • 2 tablespoons (25g) granulated sugar
  • 1 tablespoon King Arthur Unbleached All-Purpose Flour
  • 1 large egg yolk
  • 1/2 teaspoon peppermint extract (optional)

Instructions

  1. Prepare the Brownie Batter: Prepare the fudge brownie batter as instructed in your recipe. Grease a 9″ x 13″ baking pan or two 8″ round pans, and spread the batter evenly in the pan(s). Preheat your oven to 350°F (175°C).
  2. Make the Cream Cheese Mixture: In a small bowl, combine the cream cheese, granulated sugar, and flour. Mix until smooth. Add the egg yolk and peppermint extract if using, and blend again until smooth. Transfer this mixture to a disposable pastry bag and snip a very small hole at the tip.
  3. Create the Spider Web Pattern: Pipe a small pool of the cream cheese mixture slightly off-center on top of the brownie batter. Around this pool, pipe concentric circles about 1 inch apart moving outward from the center. Then, using a wet-tipped table knife, drag lines from the center of the circles outward to the edge of the pan approximately every 1 to 2 inches to create the arcs of the web.
  4. Enhance the Web Design: Use any remaining cream cheese mixture to pipe along the lines you drew with the knife, emphasizing the spokes of the spider web pattern for a more defined look.
  5. Bake: Bake the brownies at 350°F for 30 minutes until they just begin to pull away from the edges of the pan. Note that the center will rise during baking but will settle back down as the brownies cool.
  6. Cool and Serve: Remove from oven and let cool completely before cutting to maintain the pattern and texture. Store leftovers wrapped at room temperature for 5 to 6 days or freeze for longer storage.

Notes

  • The peppermint extract in the cream cheese mixture is optional but adds a nice festive flavor that complements the chocolate.
  • Using a disposable pastry bag with a very small tip ensures fine control when piping the cream cheese mixture and creating the web design.
