Ingredients

Wet Ingredients

  • 1 1/2 cups of apple cider
  • 1 cup of vegetable oil
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar, packed
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1 cup of grated apples, drained and packed tightly

Dry Ingredients

  • 2 1/2 cups of all purpose flour
  • 2 teaspoons of ground cinnamon
  • 1/2 teaspoon of nutmeg
  • 1/2 teaspoon of cloves
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda

Topping

  • 1/2 cup of granulated sugar
  • 1 teaspoon of ground cinnamon
  • 1 tablespoon of butter, melted

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it’s ready to bake the loaf cake evenly.
  2. Prepare Pan: Grease a loaf pan and line it with a parchment paper sling, leaving enough excess on either side to lift the cake out after baking; set aside.
  3. Reduce Apple Cider: Pour the apple cider into a saucepan over medium to medium-high heat and bring it to a light boil. Continue cooking until the cider reduces to about 3/4 cup to intensify the flavor.
  4. Prepare Apples: While the cider reduces, grate two large apples and place the grated apples in a clean kitchen towel. Squeeze out most of the excess moisture to avoid excess liquid in the batter.
  5. Mix Wet Ingredients: In a large bowl, whisk together the vegetable oil, granulated sugar, brown sugar, vanilla extract, eggs, the drained grated apples, and the reduced apple cider until fully combined.
  6. Add Dry Ingredients: Sift together the all-purpose flour, ground cinnamon, nutmeg, cloves, salt, baking powder, and baking soda into the wet mixture. Gently fold and mix only until just combined to avoid over-mixing.
  7. Transfer Batter: Pour the batter into the prepared loaf pan, smoothing the surface.
  8. Make Topping: In a small dish, combine granulated sugar, ground cinnamon, and melted butter until it resembles a wet sand mixture.
