  • 2 1/2 cups all purpose flour
  • 4 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp allspice
  • 3/4 cup apple cider (room temperature)
  • 1/2 cup milk (room temperature)

For the Frosting

  • 1/2 cup unsalted butter
  • 16 oz cream cheese (somewhat softened but still a bit stiff)
  • 4 1/2 cups confectioner’s sugar
  • 1/2 tsp salt
  • 1/2 tsp maple extract

Instructions

  1. Prepare Cake Pans: Preheat your oven to 350°F (175°C). Line three 8-inch cake pans with parchment paper on the bottoms and spray the sides with a non-stick baking spray to ensure easy removal later.
  2. Mix Wet Ingredients: In a large mixer bowl, combine the room temperature butter, granulated sugar, light brown sugar, vegetable oil, and vanilla extract. Beat on medium-high speed for 4-5 minutes until the mixture is light, fluffy, and well combined.
  3. Add Eggs: Add the eggs one at a time, mixing after each addition until mostly combined. Scrape down the sides of the bowl as necessary to incorporate all the ingredients fully.
