Deliciously soft lime sugar cookies made with almond flour and coconut flour, topped with a fresh lime glaze. These gluten-free and dairy-free cookies have a vibrant lime flavor and a tender texture, perfect for a spring dessert. Easily adaptable to vegan and paleo diets.

Ingredients

Wet ingredients:

  • Zest from 1 lime
  • ½ cup (100g) granulated sugar
  • ¼ cup (56g) melted and cooled coconut oil (or substitute with melted vegan butter)
  • 1 egg, at room temperature (or flax egg for vegan)
  • 1 tablespoon fresh lime juice
  • ¼ teaspoon almond extract

Dry ingredients:

  • 1 cup (112g) fine blanched almond flour
  • 2 to 3 tablespoons coconut flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt

Optional for rolling the cookies:

  • ¼ cup (50g) granulated sugar

For the glaze:

  • ½ cup (57g) powdered sugar
  • 1 tablespoon fresh lime juice, plus more if necessary
  • Extra lime zest, to garnish if desired

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix wet ingredients and lime sugar: In a large bowl, rub the lime zest and granulated sugar together with your fingers for about 30 seconds to infuse the sugar with lime flavor. Add melted and cooled coconut oil, egg, fresh lime juice, and almond extract. Whisk together until well combined and smooth.
  3. Add dry ingredients and rest dough: Add almond flour, coconut flour, baking soda, and salt to the wet mixture. Stir until combined. Let the dough sit for 5 minutes to allow the coconut flour to absorb moisture. If the dough is still too wet to handle, add an additional tablespoon of coconut flour and rest for another 5 minutes.
  4. Form and bake cookies: Roll the dough into 12 equal balls. Optionally roll each ball in granulated sugar for a sweet crust. Place the balls 2 inches apart on the prepared baking sheet and gently flatten them slightly with your hand. Bake for 9-12 minutes until edges are set but cookies remain soft. Allow cookies to cool completely on the baking sheet before glazing.
  5. Prepare lime glaze: Mix powdered sugar with lime juice until smooth. Add additional lime juice as needed to achieve desired glaze consistency.
  6. Glaze and garnish cookies: Spoon about half a tablespoon of lime glaze over each cooled cookie. Garnish with a sprinkle of lime zest if desired. Allow glaze to set before serving. Enjoy your soft, zesty lime sugar cookies!

Notes

  • To make vegan: Use a flax egg (1 tablespoon flaxseed meal mixed with 3 tablespoons water) instead of a regular egg.
  • To keep paleo: Substitute coconut sugar for granulated sugar, though this will darken the cookie color and slightly alter the flavor.
  • Glazing is optional but enhances the lime flavor and adds a delightful sweetness.
  • Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
