S’mookies are an irresistible treat that combines the nostalgic flavors of s’mores with soft-baked chocolate chip cookies. These ooey gooey campfire-inspired cookies feature a graham cracker base topped with Hershey’s chocolate, gooey marshmallows, and a cookie dough lid baked to perfection. Perfect for gatherings or a sweet indulgence, they offer a delightful mix of textures and flavors in every bite.

Ingredients

Base Layer

  • 8 sheets graham crackers (broken in half to make 16 halves)
  • 8 bars Hershey’s milk chocolate bars, cut in half (1.55 oz each)
  • 16 marshmallows, cut in halves

Cookie Dough

  • 30 ounce roll refrigerated Nestle Tollhouse chocolate chip cookie dough (cut into 16 rounds, 1/2 inch thick each)

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to ensure it is ready for baking the S’mookies.
  2. Prepare Baking Sheet: Line a large baking pan with parchment paper to prevent the S’mookies from sticking and make cleanup easier.
  3. Slice Cookie Dough: Cut the refrigerated cookie dough roll into 16 rounds about 1/2 inch thick. These will serve as the top layer of your S’mookies.
  4. Prepare Marshmallows: Cut each marshmallow in half to create smaller pieces for better distribution and double marshmallow coverage.
  5. Arrange Graham Crackers: Place 6-8 graham cracker halves on the baking sheet, leaving 2-3 inches of space between each to allow for spreading while baking.
  6. Add Chocolate Bars: Lay one half of a Hershey’s milk chocolate bar on top of each graham cracker half, creating a chocolate layer.
  7. Add Marshmallows: Place two marshmallow halves, cut side down, over the chocolate on each graham cracker to add a gooey texture.
  8. Top with Cookie Dough: Place one cookie dough round over each assembled s’more base, effectively sealing the ingredients inside.
  9. Bake: Bake the S’mookies in the preheated oven for 16-19 minutes. For a softer texture, check at 16-17 minutes. For crisper edges, allow 18-19 minutes.
