Smashburger Quesadillas combine the juicy, flavorful goodness of a classic smashed burger with the crispy, cheesy convenience of a quesadilla. This quick and delicious recipe layers seasoned ground beef and melted cheese inside a flour tortilla, cooked to golden perfection on a skillet, perfect for a satisfying meal in just 20 minutes.

Ingredients

Meat and Seasoning

  • 1 lb ground beef (80/20 blend)
  • Salt, to taste
  • Pepper, to taste
  • Garlic powder, to taste

Quesadilla Components

  • 4 large flour tortillas
  • 1 cup shredded cheddar or American cheese
  • Pickles, for serving
  • Diced onions, for serving
  • Burger sauce, for serving

Instructions

  1. Preparation: Gather all ingredients and season the ground beef evenly with salt, pepper, and garlic powder to infuse flavor into the meat before cooking.
  2. Heat the Skillet: Place a skillet or griddle over medium-high heat and allow it to get hot, setting the stage for a perfect sear.
  3. Shape and Season Beef on Tortilla: Press a small handful of the seasoned ground beef directly onto one half of each tortilla, spreading it evenly to cover about half the surface.
  4. Cook Beef and Tortilla: Place each tortilla, beef side down, onto the hot skillet and cook for 2-3 minutes until the meat is browned and starts to crisp.
  5. Flip and Add Cheese: Carefully flip the tortillas so the cooked beef side is up, then sprinkle the warm side with shredded cheese.
  6. Fold and Grill: Fold the tortilla in half over the cheese, then grill both sides for 2-3 minutes each until the tortillas are golden brown and crispy, and the cheese has melted.
  7. Serve: Remove from the skillet, cut each quesadilla into wedges, and serve warm with pickles, diced onions, and burger sauce for dipping or topping.

Notes

  • Use an 80/20 ground beef blend for the perfect balance of flavor and juiciness.
  • Large tortillas make folding and cooking easier.
  • Feel free to add other burger toppings like tomatoes or lettuce after cooking if desired.
  • Cook on medium-high heat to ensure a crispy exterior without overcooking the beef.
  • Use a spatula for flipping to avoid tearing the tortilla.
