This Slow Cooker BBQ Chicken recipe is a simple and flavorful dish perfect for busy days. Tender, juicy chicken breasts are slow-cooked in a tangy BBQ sauce with onion, Worcestershire sauce, olive oil, and brown sugar, resulting in a shredded chicken dish that’s ideal for sandwiches, tacos, or served over rice. The slow cooker method ensures the chicken is infused with deep flavors and remains moist without requiring constant attention.

Ingredients

Chicken

  • 3 lbs boneless, skinless chicken breasts

BBQ Sauce Mixture

  • 1 1/2 cups BBQ Sauce (Sweet Baby Ray’s Honey BBQ recommended)
  • 1/2 medium onion, grated with juice
  • 1 Tbsp olive oil
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar

Instructions

  1. Prepare Sauce: Stir together all the sauce ingredients, including BBQ sauce, grated onion with juice, olive oil, Worcestershire sauce, and brown sugar, in a 5-6 quart slow cooker until well combined.
  2. Add Chicken: Place the chicken breasts into the slow cooker and turn them to coat evenly with the sauce mixture. Ensure the chicken is fully covered for even cooking.
  3. Cook Chicken: Cover the slow cooker with the lid and cook on high for 2 to 3 hours or on low for 6 to 7 hours. Check early if using smaller chicken pieces or a smaller quantity. The chicken is done when it reaches an internal temperature of 165°F and easily shreds with forks.
  4. Shred and Coat: Remove the cooked chicken breasts to a cutting board. Using two forks, shred the chicken finely. Return the shredded chicken to the slow cooker and stir to coat it thoroughly with the flavorful BBQ sauce. Serve hot.

Notes

  • Use a meat thermometer to ensure chicken reaches 165°F for safety.
  • If using smaller chicken pieces or fewer servings, reduce cooking time accordingly to avoid drying out the chicken.
  • Leftover BBQ chicken stores well in the refrigerator up to 3 days.
  • Serve with buns for sandwiches, over rice, or in tacos for versatile meals.
  • For extra flavor, consider adding smoked paprika or garlic powder to the sauce mix.
