Ingredients

Sloppy Joe Mixture

  • 1 tablespoon avocado oil
  • 2 lbs ground beef (85/15)
  • 1 tablespoon onion powder
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon salt
  • 2 teaspoons Better Than Bouillon beef base (optional)
  • 1 cup ketchup
  • 2/3 cup BBQ sauce
  • 1/2 cup water (more as needed)

Ranch Potatoes

  • 1 24-ounce bag baby gold potatoes, halved or quartered
  • 1 tablespoon avocado oil
  • 3 tablespoons butter
  • 1 tablespoon ranch seasoning

To Serve

  • Hamburger buns
  • Pickles or pickled jalapeños (optional)

Instructions

  1. Brown the Beef: Heat the avocado oil in a large skillet over high heat. Add ground beef and leave undisturbed for a few minutes to develop browned bits. Cook until no longer pink, breaking it into very small pieces with a spatula. Optionally, tilt the pan and blot some excess oil with a paper towel once or twice to reduce greasiness.
  2. Add Spices: Stir in onion powder, garlic powder, Better Than Bouillon beef base (if using), and salt until evenly mixed into the beef.
  3. Add Sauces: Pour in ketchup and BBQ sauce, stirring to coat all the beef. Gradually add water a little at a time until the mixture turns into a thick, glossy meat sauce. Bring to a low simmer and cook until the color deepens and sauce slightly caramelizes around the edges.
  4. Roast Potatoes: Preheat oven to 425°F (220°C). On a sheet pan, toss baby gold potatoes with avocado oil and a pinch of salt. Roast in the oven for 25-30 minutes, stirring once or twice, until the potatoes are golden and tender inside. Meanwhile, keep the Sloppy Joe mixture simmering over low heat.
  5. Make Ranch Potatoes: Remove the potatoes from the oven. Add butter directly to the hot sheet pan and toss with the potatoes so the butter melts and coats them evenly. Sprinkle ranch seasoning over the potatoes and toss again to fully incorporate.
  6. Serve: Place the Sloppy Joe mixture on softened hamburger buns. Top with pickles or pickled jalapeños if desired. Serve alongside a generous scoop of the buttery ranch potatoes for a complete meal.

Notes

  • Using Better Than Bouillon beef base adds richness but can be skipped; adjust salt accordingly if omitted.
  • If you prefer less oil, blotting excess fat after browning beef helps reduce grease.
  • The ranch potatoes can be made with any preferred ranch seasoning brand; Hidden Valley is recommended for classic flavor.
  • Pickled jalapeños add a nice kick but are optional according to taste preferences.
  • For softer hamburger buns, warm them briefly before assembling.
