This Sloppy Joe Casserole is a delicious, hearty twist on the classic Sloppy Joe sandwich, layered with ground beef in a rich tomato sauce, sweet and tangy flavors, topped with melted Colby jack cheese and fluffy buttermilk biscuits.   • 3/4 cup petite diced green bell pepper

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon yellow mustard
  • Kosher salt, to taste
  • Fresh cracked pepper, to taste

Topping

  • 4 ounces Colby jack cheese, shredded
  • 16.3 ounce can of refrigerated buttermilk biscuits (8 biscuits)
  • 1 egg

Instructions

  1. Prepare the Sloppy Joe Sauce: Heat olive oil in a large skillet over medium heat. Add diced onion, green bell pepper, and minced garlic, sautéing until softened and fragrant, about 5 minutes.
  2. Cook the Ground Beef: Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and no longer pink, about 7-8 minutes. Drain excess fat if necessary.
  3. Add Flavorings: Stir in tomato paste, tomato sauce, ketchup, brown sugar, yellow mustard, salt, and pepper. Combine well and simmer uncovered for about 10 minutes, allowing flavors to meld and sauce to thicken slightly.
  4. Preheat Oven: Preheat your oven to 375°F (190°C) while the meat mixture simmers.
  5. Assemble the Casserole: Spread the Sloppy Joe mixture evenly in a greased 9×13 inch baking dish. Sprinkle the shredded Colby jack cheese evenly over the meat layer.
  6. Prepare Biscuit Topping: Separate the refrigerated buttermilk biscuits into individual rounds. Place the biscuits on top of the cheese layer evenly.
  7. Egg Wash: Beat the egg in a small bowl and brush it over the biscuits to help them brown beautifully.
  8. Bake: Bake in the preheated oven for approximately 20-25 minutes, or until biscuits are golden brown and cheese is bubbly.
