Perfect for a quick 15-minute meal that balances protein and fresh vegetables for a nutritious, satisfying dish.

Ingredients

Salad Base

  • 6 cups baby mixed greens or chopped romaine

Protein

  • 1 pound boneless, skinless chicken breast, seasoned and cooked
  • 6 slices cooked center cut turkey bacon, chopped
  • 6 hardboiled eggs, chopped

Vegetables and Cheese

  • 1 large avocado, diced
  • 1 1/3 cup cherry tomatoes, cut in half
  • 1/2 small red onion, thinly sliced
  • 2 ounces blue cheese (optional)

Dressing

  • 1 cup Light Ranch Dressing

Instructions

  1. Prepare Salad Ingredients: Season the chicken breast with your preferred spices and cook it thoroughly using your preferred method such as grilling, baking, or pan-cooking. Cook the turkey bacon slices until crisp, then chop them into bite-sized pieces. Hardboil the eggs, peel, and chop them. Wash and prepare the mixed greens or romaine lettuce.
  2. Assemble the Salad: Evenly distribute the mixed greens, cooked chicken, chopped turkey bacon, chopped hardboiled eggs, diced avocado, halved cherry tomatoes, sliced red onion, and optional blue cheese among 4 containers or plates, dividing all ingredients evenly to create balanced portions for each serving.
  3. Add Dressing: Drizzle approximately 3 tablespoons of Light Ranch Dressing on each individual salad or pack the dressing separately to keep greens crisp before serving.
  4. Serve and Enjoy: Serve the salad immediately or chill the containers for later consumption. This salad is ideal for a fast, healthy meal prepared in about 15 minutes and is great for meal prep.

Notes

  • Chicken can be grilled, baked, or pan-cooked depending on preference.
  • Use turkey bacon as a leaner alternative to traditional bacon for lower fat content.
  • Blue cheese is optional; omit for a dairy-free or lighter version.
  • For meal prep convenience, keep dressing separate until ready to eat to prevent sogginess.
  • Feel free to substitute ranch dressing with your favorite light vinaigrette for added variety.
