Ingredients

Vegetables and Seafood

  • 1 lb baby potatoes (red or yellow)
  • 4 ears corn on the cob (cut crosswise into 4 pieces each)
  • 1 onion (peeled and cut into wedges)
  • 1 pound shrimp (peeled and deveined)

  • 12 ounces smoked andouille sausage (thinly sliced)

Butter and Oils

  • 1/4 cup butter (melted, plus extra 2 tablespoons melted for finishing)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)

  • 1 tablespoon Old Bay seasoning
  • 1 pinch cracked pepper

Instructions

  1. Preheat and Prepare: Preheat your oven to 425°F (220°C). Lightly grease a large baking sheet or tray with nonstick cooking oil spray or a smear of butter to prevent sticking.
  2. Boil Potatoes and Onion: In a large pot of salted boiling water, add the baby potatoes and onion wedges. Boil for 5 minutes to start softening.
  3. Add Corn and Continue Boiling: Add the cut corn pieces into the boiling water with the potatoes and onions. Continue boiling for an additional 5 to 7 minutes until the potatoes are just tender. Then drain all vegetables well.
  4. Arrange on Baking Sheet: Spread the cooked potatoes, corn, shrimp, and sliced andouille sausage evenly on the prepared baking sheet for roasting.
  5. Mix Butter Seasoning: In a small bowl, combine melted butter, olive oil, minced garlic, and Old Bay seasoning. Pour this flavorful mixture over the arranged ingredients on the baking sheet. Gently toss everything to ensure even coating.
  6. Bake and Broil: Bake the shrimp boil mixture in the preheated oven for about 10 minutes, until the shrimp are opaque and fully cooked and the corn is tender. For added crispiness, broil for 1 to 2 minutes to get crispy edges.
  7. Garlic Butter Finish: After baking, mix an additional 2 tablespoons of melted butter with 1 clove minced garlic. Pour this over the shrimp boil and lightly toss or mix using two spoons to coat evenly.
