Ingredients

Main Ingredients

  • 1 pound gnocchi (shelf stable or refrigerated)
  • 1 pint cherry tomatoes
  • 3 sliced garlic cloves
  • 1 small sliced red onion
  • 1 medium sliced zucchini
  • 1 (12-ounce) package sliced sausages

Seasoning & Toppings

  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • ½ cup shredded Parmesan cheese
  • Fresh chopped parsley (optional for garnish)

Instructions

  1. Preheat Oven: Preheat the oven to 425 degrees Fahrenheit (220°C) to ensure it reaches the right temperature for roasting the ingredients evenly and achieving a crispy finish on the gnocchi and vegetables.
  2. Prepare Sheet Pan: On a large sheet pan, combine 1 pound of gnocchi, 1 pint of cherry tomatoes, 3 sliced garlic cloves, 1 small sliced red onion, 1 medium sliced zucchini, and 1 package (12 ounces) of sliced sausages. This combination allows even roasting of all ingredients together.
  3. Season: Drizzle the mixture with 3 tablespoons of olive oil. Sprinkle 1 tablespoon of Italian seasoning along with salt and freshly ground black pepper to taste. Toss everything well to coat all ingredients evenly, then spread out into a single even layer to promote proper roasting.
  4. Bake: Place the sheet pan in the preheated oven and bake for 20-25 minutes, or until the gnocchi and vegetables are golden brown and crispy. Stirring halfway through can ensure even browning if desired.
  5. Finish and Serve: Remove the pan from the oven and immediately sprinkle ½ cup of shredded Parmesan cheese over the hot gnocchi and vegetables. Garnish with fresh chopped parsley if using. Serve warm as a hearty and flavorful one-pan meal.

Notes

  • You can substitute the sausage with a plant-based sausage alternative to make it vegetarian.
  • For extra crispiness, broil the gnocchi for the last 2-3 minutes watching carefully to avoid burning.
  • Feel free to add other vegetables like bell peppers or mushrooms based on preference.
  • If using frozen gnocchi, make sure to thaw beforehand for even cooking.
  • Fresh Italian seasoning blend can be used instead of dried for more aromatic flavor.
