Ingredients

For the Chicken:

  • Grilled Sesame Chicken (prepared according to the grilled sesame chicken recipe)

For the Salad:

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • ½ cup diced green onion
  • ¾ cup freshly diced cilantro
  • 1 cup shredded carrots
  • 1 red bell pepper, thinly julienned
  • 1 jalapeño, seeded and diced

For the Dressing:

  • 1 batch Sesame Ginger Dressing (prepare separately)

For Serving:

  • ⅓ cup toasted sliced almonds
  • ⅓ cup roasted cashew halves
  • Sesame seeds, for sprinkling
  • Extra cilantro, for garnish
  • Extra green onion, chopped for garnish
  • A few jalapeño slices
  • Optional: Crispy wonton strips

Instructions

  1. Marinate the Chicken: Prepare the grilled sesame chicken by marinating it according to your favorite grilled sesame chicken recipe. This step is essential to infuse the chicken with savory sesame flavors.
  2. Make the Dressing: Prepare the sesame ginger dressing following the dressing recipe. Set it aside for use later in the salad assembly.
  3. Assemble the Salad: In a large mixing bowl, combine shredded green cabbage, shredded red cabbage, diced green onion, freshly diced cilantro, shredded carrots, julienned red bell pepper, and diced jalapeño. Pour the sesame ginger dressing over the vegetables and toss thoroughly to ensure all ingredients are well coated. Cover the bowl and set aside.
  4. Cook the Chicken: Grill or bake the marinated chicken according to your recipe instructions until it’s fully cooked and juicy. Once cooked, slice the chicken to serve.
