These Savoury Lunchbox Muffins are a delicious and convenient snack or meal option, packed with a mix of vegetables, aromatic herbs, and cheddar cheese. Perfectly golden and fluffy, they make an ideal portable lunch or a tasty addition to any meal.

Ingredients

Wet Ingredients

  • 2 medium free-range eggs
  • 150 ml whole milk
  • 100 ml olive oil

Dry Ingredients

  • 250 g self-raising flour
  • 2 tsp garlic granules
  • 1 tsp dried sage or finely chopped fresh sage leaves
  • 1 tsp ground cumin
  • salt and pepper, to taste

Other Ingredients

  • 120 g cheddar cheese, grated
  • 250 g frozen chopped vegetable mix
  • oil spray (if not using muffin cases)

Instructions

  1. Prepare the Wet Mixture: Preheat the oven to 200°C (180°C fan). In a large bowl, beat 2 medium eggs. Add 150 ml whole milk and 100 ml olive oil, then beat together until well combined. Stir in 120 g grated cheddar cheese, 2 tsp garlic granules, 1 tsp dried or fresh sage, 1 tsp ground cumin, and 250 g frozen chopped vegetables.
  2. Add the Flour and Season: Fold 250 g self-raising flour into the wet mixture along with salt and pepper to taste. The batter will become thick and stodgy—this is expected.
  3. Fill Muffin Tray and Bake: Line a 12-hole muffin tray with muffin cases or lightly spray each muffin hole with oil. Spoon the batter evenly into the cases, leveling each one to ensure even baking. Bake in the preheated oven for 20–25 minutes until the tops are golden and muffins are cooked through.
  4. Cool and Store: Allow the muffins to cool in the tray for a few minutes before transferring them to a wire rack to cool completely. Store cooled muffins in an airtight container in the refrigerator.

  • If you prefer, fresh herbs like sage can be used instead of dried for a fresher flavor.
