Enjoy a colorful and healthy treat with these Rainbow Fruit Skewers made of five different types of fresh fruit, drizzled with rich dark chocolate for an extra indulgence. Perfect as a fun snack or light dessert, especially for kids, these fruit kabobs are dairy-free, gluten-free, and paleo-friendly, combining natural sweetness and vibrant colors in every bite.

Ingredients

Fruit Skewers

  • 6 strawberries, hulled
  • 1 orange, peeled, segmented and cut in half
  • ½ of a ripe pineapple, peeled, cored and cut into 1-inch chunks (about 1½ cups pineapple chunks)
  • 1 banana, cut into 1-inch slices
  • 2 kiwi fruit, peeled and cut into 1-inch chunks

Chocolate Drizzle

  • 1 bar semi-sweet or dark chocolate, vegan or dairy free if desired
  • Optional: flaky sea salt

Instructions

  1. Assemble the Fruit Skewers: Arrange the prepared fruits on wooden skewers in a rainbow order: strawberry, orange, pineapple, banana, kiwi. Lay the skewers on a large plate or a baking pan lined with parchment or wax paper for easy cleanup.
  2. Melt the Chocolate: Break the dark chocolate bar into small pieces and place them in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval until the chocolate is fully melted and smooth.
  3. Drizzle Chocolate Over Skewers: Drizzle the melted chocolate evenly over the fruit kabobs. If desired, sprinkle a pinch of flaky sea salt over the drizzled chocolate to enhance flavor complexity.
  4. Set the Chocolate: Place the plate of skewers in the freezer for about 5 minutes or until the chocolate has hardened, creating a delightful texture contrast. Serve chilled and enjoy immediately.

Notes

  • Fruit kabobs stay fresh for about 1 day when stored in the refrigerator.
  • If you prefer not to use dark chocolate, serve with vanilla yogurt or enjoy the fruit skewers plain.
  • Try other dipping options such as honey, nut butter, or coconut cream for variety.
