Halwai Style Lachhedar Rabri is a rich and creamy Indian dessert made by slowly reducing whole milk to form delicate layers of malai, flavored with cardamom and saffron, and garnished with slivered pistachios and almonds. This luscious treat is served chilled and is perfect for festive occasions or as a sweet indulgence.

Ingredients

Milk Mixture

  • 6 cups whole milk
  • 4 tablespoons sugar
  • ½ teaspoon ground cardamom
  • 12 saffron strands (optional, for color and fragrance)

Garnish

  • 1 tablespoon raw unsalted pistachios (thinly sliced)
  • 1 tablespoon raw unsalted almonds (thinly sliced)

Instructions

  1. Bring Milk to Boil: Pour the milk into a wide kadai or pan. Stir continuously with a spatula and bring it to a gentle boil, ensuring the milk does not stick to the bottom of the pan to avoid burning.
  2. Form Malai Layers: Lower the heat to medium. As layers of malai (cream) start to form on the surface, gently lift them with a fork and press them onto the sides of the pan. Continue this process for 15 to 20 minutes, stirring only the milk in the center occasionally to prevent scorching.
  3. Reduce Milk by Half: Once the milk has reduced by half, spoon some liquid milk over the malai on the sides to keep them moist. Take care not to let the malai brown; reduce the heat if necessary.
  4. Add Flavorings: Add sugar, ground cardamom, and saffron strands to the milk. Stir the milk in the center until the sugar is completely dissolved, cooking for an additional 5 to 10 minutes to enhance flavor and further thicken the milk.
  5. Final Reduction: Turn off the heat as soon as the milk has reduced to about one third of its original volume but still retains some liquid. Excessive reduction may result in a dry texture.
  6. Combine Malai Layers: Using a silicone spatula, scrape all the malai clinging to the sides into the center of the pan. Gently mix to keep the distinct layers intact, giving the rabri its characteristic lace-like texture.
  7. Garnish and Chill: Garnish the rabri with thinly sliced pistachios and almonds. Allow it to cool to room temperature before refrigerating for at least 1 hour. Serve chilled for the best taste and texture.

Notes

  • Use a wide pan or kadai for even heat distribution and faster reduction of milk.
  • Stir gently and avoid vigorous stirring to preserve the malai layers.
  • Saffron is optional but adds a lovely aroma and color; omit for a pure white rabri.
  • Ensure gentle heat to prevent the milk from burning or sticking to the pan.
  • Rabri can be kept refrigerated for up to 2 days, but is best enjoyed fresh.
  • Adjust sugar to taste depending on sweetness preference.
