  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef

Butter Glaze

  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix

Au Jus

  • 1 packet au jus gravy mix
  • 3 cups water

Optional Garnish

  • Fresh chopped parsley

Instructions

  1. Caramelize the Onions: In a large skillet over medium heat, melt the 3 tablespoons of unsalted butter. Add the thinly sliced onions and stir to coat them in the butter. Cook, stirring occasionally, for 12 to 15 minutes until they become soft and browned but not burnt.
  2. Season the Onions: Add the minced fresh thyme, kosher salt, and black pepper to the caramelized onions. Stir well to combine, then remove from heat and set aside.
  3. Slice and Prep Rolls: Preheat your oven to 350°F (175°C). Take the 12 sweet rolls out of their packaging, keeping them intact as a group. Slice horizontally so you have the tops and bottoms separated. Place the bottoms cut side up in an 11 by 7-inch baking dish.
  4. Layer Cheese and Beef: Layer half of the provolone cheese slices over the bottoms of the rolls. Evenly distribute the roast beef slices across the cheese, then spread the caramelized onions over the beef. Top with the remaining provolone cheese slices, then place the tops of the rolls back onto the sliders.
  5. Brush the Butter Glaze: In a small bowl, combine the melted 1/2 cup of unsalted butter with the dried onion soup mix. Brush this buttery mixture evenly across the tops of the rolls, ensuring complete coverage for flavor and browning. Alternatively, you can pour the mixture over the tops if preferred.
  6. Bake Covered then Crisp: Loosely cover the baking dish with aluminum foil, making sure the foil does not touch the tops of the rolls. Bake covered for 25 minutes, then remove the foil and bake for an additional 5 minutes uncovered to allow the tops to brown and crisp.
  7. Make Au Jus and Serve: While the sliders bake, prepare the au jus gravy according to the package directions using the 3 cups of water. Serve the warm sliders garnished with fresh chopped parsley if desired. Offer small bowls of the au jus on the side for dipping the sliders.
