Ingredients

For the Beef Filling

  • 1 lb ground beef (or ground chicken/turkey)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp Chinese 5-spice powder
  • 2 tbsp low-sodium soy sauce or tamari
  • 1 tbsp Thai chili sauce
  • 1 tsp toasted sesame oil

For the Rolls

  • 8 small flour tortillas or rice paper
  • 2 Persian cucumbers, julienned
  • 1 cup fresh cilantro
  • 1 cup Thai basil (or Italian basil)
  • 3 green onions, chopped
  • ½ cup roasted peanuts, chopped

For the Dipping Sauce (Optional)

  • 1 tbsp honey
  • 1 tbsp ketchup
  • 1 tbsp chili paste
  • 1 tsp lime zest
  • 1 tbsp lime juice
  • 1 tbsp rice vinegar
  • 1 tbsp tamari
  • 1 tsp grated ginger
  • 1 clove garlic, grated

Instructions

  1. Prepare the sauce mix: In a small bowl, combine soy sauce, Thai chili sauce, toasted sesame oil, and Chinese 5-spice powder. This mixture will flavor the beef filling.
  2. Cook the beef: Heat a skillet over medium-high heat and brown the ground beef until no longer pink. Add the minced garlic and grated ginger, cooking for 2 minutes until aromatic.
  3. Add sauce to beef: Stir in the prepared sauce mixture and continue cooking until the beef is glazed and slightly caramelized, about 3-5 minutes. Remove from heat.
  4. Prepare wrappers: Warm the flour tortillas in a dry pan or microwave until pliable, or soften rice paper according to package instructions for easy rolling.
  5. Assemble the rolls: On each tortilla or rice paper, layer a portion of the beef mixture, fresh herbs (cilantro and basil), julienned cucumber, chopped green onions, and chopped roasted peanuts. Wrap tightly to form rolls.
  6. Make the dipping sauce (optional): In a small bowl, whisk together honey, ketchup, chili paste, lime zest, lime juice, rice vinegar, tamari, grated ginger, and grated garlic until well combined.
