This playful Pumpkin Quesadilla recipe features artisan flatbread with a festive pumpkin face cutout filled with melted mozzarella and cheddar cheeses. Perfect for a quick, fun appetizer or snack, these quesadillas combine creamy, gooey cheese with a crispy baked flatbread, making a visually impressive and delicious treat ready in just 11 minutes.

Ingredients

Ingredients

  • 6 Foldit® Artisan Flatbread
  • 4 oz mozzarella cheese, thinly sliced (or Monterey Jack)
  • 4 oz cheddar cheese, thinly sliced

Instructions

  1. Preheat Oven: Preheat your oven to 425 degrees Fahrenheit to ensure it reaches the correct temperature for baking the quesadillas to golden perfection.
  2. Prepare Pumpkin Faces: Using a sharp paring knife, carefully cut a pumpkin face design into one side of each flatbread. Be sure to reserve the larger pieces of cut-out dough if you wish to create pumpkin stems for added decoration.
  3. Layer Cheese: On the side of the flatbread without the pumpkin face cutout, place a layer of mozzarella or Monterey Jack cheese. Then add a layer of cheddar cheese on top of it.
  4. Fold and Bake: Fold each flatbread so that the side with the cheese layers is on the inside and the pumpkin face cutout is visible. Place the folded quesadillas on a baking sheet and bake in the preheated oven for 3 to 5 minutes until the cheese is melted and the flatbread is warm and slightly crispy.
  5. Finish and Serve: Remove from the oven and gently press on the pumpkin face cutouts so that the melted cheese oozes through the openings. Serve immediately. Makes 6 servings.

Notes

  • Use a very sharp paring knife for clean pumpkin face cutouts and handle with care.
  • If desired, use the reserved dough pieces to create small pumpkin stems for a festive look.
  • Substitute cheeses like Monterey Jack or a blend for preferred flavor variations.
  • Watch closely while baking to avoid burning; the cheese should just melt and ooze through the cutouts.
  • Serve warm for best texture and flavor.
