Ingredients

Wet Ingredients

  • 1 cup milk, plus more as needed
  • 1 medium very ripe banana
  • 3 large eggs
  • ½ cup whole milk Greek yogurt
  • 1 tablespoon avocado oil, plus more for the pan
  • 1 tablespoon maple syrup, plus more for serving
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups whole rolled oats
  • 2 scoops protein powder, about ¼ cup (365 Organic Pea Protein, Unflavored suggested)
  • 1 tablespoon baking powder
  • ½ teaspoon sea salt

Instructions

  1. Blend ingredients: In a blender, add the milk, ripe banana, eggs, Greek yogurt, avocado oil, maple syrup, vanilla extract, rolled oats, protein powder, baking powder, and sea salt. Blend all ingredients until the mixture is smooth and well combined.
  2. Mix batter: Pour the blended mixture into a large bowl and stir gently to ensure an even batter consistency throughout.
  3. Heat skillet: Preheat a nonstick skillet over medium heat and lightly brush it with avocado oil to prevent sticking.
  4. Cook pancakes: Using a ⅓-cup measuring cup, pour batter onto the skillet working in batches. Reduce heat to medium-low and cook each pancake for about 1½ to 2 minutes per side, until they are golden brown and cooked through. Adjust the heat to low if pancakes brown too quickly.
  5. Adjust batter consistency: Note that the batter thickens between batches; if it becomes too thick, thin it by stirring in 1 to 2 tablespoons more milk as needed before continuing to cook the remaining pancakes.
  6. Serve: Serve the pancakes warm topped with maple syrup and fresh fruit if desired.
