These Pineapple Upside Sugar Cookies combine the delightful flavors of classic sugar cookies with a tropical pineapple twist. Soft, buttery cookies are topped with caramelized pineapple rings, making for a fun and flavorful treat that’s perfect for any occasion.

Ingredients

Cookie Dough

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt

Topping

  • 1012 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling

Instructions

  1. Prepare the Dough: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined.
  2. Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  3. Combine Ingredients: Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Avoid overmixing to keep the cookies tender.
  4. Preheat and Prepare Baking Sheet: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cookie removal.
  5. Shape the Cookies: Take a portion of dough and flatten it slightly. Place a pineapple ring on top of each portion and gently press the dough around the edges to secure the pineapple, forming a cookie base with the pineapple on top.
  6. Add Sugar Topping: Sprinkle additional granulated sugar over each pineapple ring to encourage caramelization and add sweetness.
  7. Bake the Cookies: Place the baking sheet in the preheated oven and bake for 12–15 minutes or until the edges are lightly golden and the cookies are set.
  8. Cool and Serve: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy these tropical-inspired sugar cookies as a delightful treat.

Notes

  • Make sure to thoroughly drain and pat dry the pineapple rings to prevent excess moisture from affecting the cookie texture.
  • You can use fresh pineapple rings if preferred, but they should also be patted dry before use.
  • For a more caramelized pineapple topping, broil the cookies for 1-2 minutes at the end, watching closely to prevent burning.
  • Store cookies in an airtight container to keep them fresh for up to 3 days.
  • These cookies are perfect for summer parties, tropical-themed events, or as a unique dessert option.
