Ingredients

Cobbler Topping

  • 12 tablespoons (170g or ¾ cup) unsalted butter, melted and cooled slightly
  • 2 cups (260g) all-purpose flour
  • ⅔ cups (135g) light brown sugar
  • 2 teaspoons (8g) baking powder
  • ¼ teaspoon fine sea salt
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Apple Filling

  • 6 large apples (about 3 ¼ pounds), peeled and sliced
  • 2 tablespoons maple syrup
  • 1 tablespoon fresh lemon juice
  • 1 ½ teaspoons vanilla extract
  • 2 tablespoons (18g) all-purpose flour
  • 1 tablespoon (12g) brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • Pinch ground cloves
  • ⅛ teaspoon fine sea salt

Instructions

  1. Make the Cobbler Topping: In a medium bowl, whisk together the flour, brown sugar, baking powder, and salt until well combined. Create a well in the center and pour in the melted butter, milk, and vanilla extract. Stir with a wooden spoon until the mixture forms a crumbly dough.
  2. Chill the Dough: Shape the crumbly dough into a rectangle or disc depending on your baking dish shape and wrap it tightly with plastic wrap. Refrigerate for 30 minutes to firm up.
  3. Prepare the Apple Filling: While the topping chills, peel, core, and slice the apples into ¼-inch thick slices. Place them in a large bowl and toss with maple syrup, lemon juice, and vanilla extract to coat evenly.
  4. Mix the Spices: In a small bowl, whisk together the flour, brown sugar, cinnamon, ginger, cloves, and salt. Sprinkle this mixture over the apples and toss well to combine all flavors.
  5. Preheat the Oven and Prepare Baking Dish: Preheat your oven to 350°F (176°C). Lightly grease a 13 x 9-inch baking dish with butter to prevent sticking.
  6. Assemble the Cobbler: Transfer the apple mixture into the prepared baking dish, making sure to scrape in all the spices and syrup from the bowl.
  7. Roll Out the Topping: Remove the dough from the fridge and lay it flat on a sheet of parchment paper. Cover it with another sheet of parchment or plastic wrap and roll out to about ¼-inch thickness. The dough is sticky, so rolling between parchment prevents sticking.
  8. Top the Apples: Tear or cut the rolled dough into pieces and arrange them over the apples, overlapping slightly to resemble shingles on a roof. Press the dough gently onto the apples.
  9. Bake the Cobbler: Bake in the preheated oven for 50 minutes to 1 hour, or until the apple filling is bubbly and the topping is firm, golden, and cookie-like in texture. Rotate the baking dish halfway through for even cooking.

Notes

  • You can use a combination of apple varieties for a more complex flavor and texture—Granny Smith, Honeycrisp, and Fuji are good options.
  • Allow the cobbler to cool for at least 15 minutes before serving so the filling sets slightly.
  • For added richness, serve warm cobbler with vanilla ice cream or whipped cream.
  • Ensure the melted butter used in the topping is cooled slightly so it doesn’t cook the flour prematurely.
  • If you prefer a sweeter cobbler, increase the brown sugar in the topping by 1-2 tablespoons.
