This Pecan Cobbler is a delightful dessert featuring a buttery batter topped with crunchy pecans, brown sugar, and toffee bits, all baked to golden perfection and served warm, optionally with vanilla ice cream. It combines a rich, nutty flavor with a soft, gooey texture, perfect for cozy gatherings or a comforting treat.

Ingredients

Base Ingredients

  • 1/2 cup butter, cubed
  • 1 cup plus 2 tablespoons all-purpose flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup 2% milk
  • 1 teaspoon vanilla extract

Toppings

  • 1–1/2 cups coarsely chopped pecans
  • 1 cup packed brown sugar
  • 3/4 cup brickle toffee bits
  • 1–1/2 cups boiling water

Optional

  • Vanilla ice cream, for serving

Instructions

  1. Melt the butter: Preheat the oven to 350°F. Place the cubed unsalted butter in a 13×9-inch baking pan and put it in the oven for 3 to 5 minutes until melted. Remove from the oven and set aside.
  2. Make the cobbler batter: In a mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Add the milk and vanilla extract and stir until the batter is smooth and well combined.
  3. Layer remaining ingredients: Pour the batter into the pan with the melted butter; do not stir the butter into the batter, allowing them to remain as separate layers. Evenly spread the batter in the pan using a spatula.
  4. Add toppings and boiling water: Sprinkle the chopped pecans, brown sugar, and brickle toffee bits evenly over the batter. Slowly pour the boiling water over the top carefully without stirring.
  5. Bake the cobbler: Bake the cobbler uncovered in the preheated oven for 30 to 35 minutes until golden brown and bubbly.
  6. Cool and serve: Remove the cobbler from the oven and cool on a wire rack for about 30 minutes to allow the filling to thicken. Serve warm, optionally topped with vanilla ice cream.

Notes

  • Do not stir the butter into the batter when assembling; the batter and melted butter layers should remain separate.
  • Pour boiling water carefully over the top without stirring to achieve the cobbler’s signature texture.
  • Allow the cobbler to cool before serving to let the filling set properly.
  • Serve with vanilla ice cream for an extra indulgent dessert.
