Delicious and easy-to-make Peanut Butter Rice Krispie Treats featuring a gooey peanut butter and marshmallow base topped with a rich chocolate layer. Perfect for a sweet snack or dessert that kids and adults will love.

Ingredients

Base Ingredients

  • 1/4 cup unsalted butter
  • 1 (10 oz) bag mini marshmallows (about 5 cups)
  • 1/2 cup peanut butter
  • 6 cups Rice Krispie cereal

Topping Ingredients

  • 8 oz chocolate chips (about 1 1/3 cups)
  • 2 teaspoons vegetable oil

Instructions

  1. Prepare the pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to ensure the treats don’t stick.
  2. Melt base ingredients: In a large saucepan over low heat, melt the unsalted butter, mini marshmallows, and peanut butter together while stirring gently to combine everything into a smooth mixture.
  3. Mix in cereal: Once the marshmallow mixture is fully melted and smooth, remove the pan from the heat and stir in the 6 cups of Rice Krispie cereal until evenly coated.
  4. Press mixture into pan: Transfer the mixture to the prepared pan and press it down firmly and evenly. Lightly spray your hands with non-stick spray to prevent sticking while pressing.
  5. Melt chocolate topping: Place the chocolate chips into a medium heatproof bowl. Microwave in 45-second intervals on medium power, stirring after each interval until the chocolate is almost melted and smooth when stirred.
  6. Add oil and combine: Stir the 2 teaspoons of vegetable oil into the melted chocolate to give it a glossy finish and smoother texture.
  7. Top the treats: Pour the melted chocolate evenly over the pressed Rice Krispie treats in the pan. Spread gently if needed.
  8. Set and cut: Allow the chocolate topping to harden at room temperature for about 2 hours. Once set, cut into squares and serve.
  9. Store: Store the treats in an airtight container at room temperature to maintain freshness and texture.

Notes

  • Lightly spraying your hands helps to prevent the sticky mixture from adhering to them when pressing into the pan.
  • Microwaving chocolate on medium power prevents burning and ensures smooth melting.
  • You can substitute chocolate chips with chopped chocolate if preferred.
  • Store treats in an airtight container at room temperature for up to 3-4 days for best taste and texture.
  • If you prefer a firmer treat, refrigerate the bars after the chocolate topping hardens.
