This oven-roasted green beans recipe is a quick and flavorful 30-minute side dish perfect for any meal. Fresh green beans are tossed with olive oil, garlic, salt, and pepper, then roasted to tender-crisp perfection with a topping of melted Parmesan cheese. Finished with a squeeze of lemon juice and a sprinkle of fresh parsley, these green beans deliver a delicious balance of savory, tangy, and fresh flavors, making them an irresistible accompaniment to your favorite main dishes.

Ingredients

Green Beans

  • 1 pound green beans, trimmed

Seasoning & Toppings

  • 2 Tbsp olive oil
  • 2 large cloves garlic, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 cup Parmesan cheese, freshly grated (preferably Parmigiano-Reggiano)
  • 1/2 lemon, juiced
  • 1–2 Tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Green Beans: Spread the trimmed green beans evenly on the lined baking sheet. Drizzle with olive oil, then add the minced garlic, salt, and pepper. Toss everything together to coat the green beans evenly with the seasonings and oil, then spread them back out in a single even layer to allow for consistent roasting.
  3. Add Parmesan Cheese: Evenly sprinkle the freshly grated Parmesan cheese over the top of the green beans, covering them well to achieve a crispy cheesy crust during roasting.
  4. Roast the Green Beans: Place the baking sheet in the preheated oven and roast for about 20 minutes. The green beans should become fork-tender yet still retain a bit of crunch, while the cheese melts and turns lightly browned and crispy.
  5. Finish and Serve: Remove the green beans from the oven. Immediately squeeze fresh lemon juice over the top and garnish with chopped parsley. Taste and adjust with additional salt and pepper if needed. Serve hot as a delicious and nutritious side dish.

Notes

  • For extra crispness, you can broil the green beans for 1-2 minutes after roasting but watch carefully to prevent burning.
  • Use fresh garlic for the best flavor; garlic powder can be substituted but will yield a milder taste.
  • Parmesan cheese adds a salty, nutty flavor but can be omitted or replaced with a vegan cheese alternative for dietary preferences.
  • If you prefer softer green beans, roast a few minutes longer but be careful not to overcook.
  • This recipe pairs well with roasted meats, grilled chicken, or as part of a vegetarian meal.
