Oreo Cheesecake Bars are a delicious no-bake American dessert perfect for parties or a cozy night in. Featuring a crunchy Oreo crust and creamy cheesecake filling studded with chopped Oreos, these bars are easy to prepare and require chilling time to set, making them an ideal make-ahead treat.

Ingredients

Base

  • 2 cups Oreos, crushed
  • 1/4 cup butter, melted

Filling

  • 16 oz cream cheese, softened
  • 1/3 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup whipping cream
  • 16 Oreo cookies, chopped

Toppings (optional)

  • Whipped cream
  • Chocolate syrup
  • Additional Oreo cookies

Instructions

  1. Prepare the Pan: Line a 9×9 inch square pan with parchment paper to prevent sticking and to make removal of the bars easier.
  2. Make the Base: In a bowl, combine crushed Oreos with melted butter. Press the mixture firmly into the bottom of the prepared pan using a spatula, a flat-bottomed glass, or measuring cup to compact it into an even base. Refrigerate the base while you prepare the filling.
  3. Prepare the Filling: Beat the softened cream cheese with granulated sugar and vanilla extract until smooth. Gradually add the whipping cream and continue beating until everything is well combined and creamy. Fold in the chopped Oreo cookies gently to distribute them evenly.
  4. Assemble: Pour the cheesecake filling over the chilled Oreo base, spreading it evenly with a spatula.
  5. Chill: Refrigerate the cheesecake for at least 4 to 6 hours, or preferably overnight, to allow it to set firmly.
  6. Serve: Once set, lift the cheesecake out of the pan using the parchment paper and cut it into squares. You can make 9 regular-sized servings or 16 smaller bites.
  7. Add Toppings: Garnish with whipped cream, chocolate syrup, or extra Oreo cookies if desired before serving.

Notes

  • For best results, chill the cheesecake overnight to ensure it firms up nicely.
  • You can adjust the size of the servings according to your preference—smaller bite-sized squares are great for parties.
  • Use full-fat cream cheese and whipping cream for the richest texture and flavor.
  • Ensure the cream cheese is softened to avoid lumps in the filling.
  • Storing leftover bars in the refrigerator is recommended and they should be consumed within 3-4 days.
