Ingredients

Protein & Pasta

  • ½ lb dried pasta (conchiglie pasta recommended)
  • 1 lb ground chicken (450-500g)

Vegetables & Aromatics

  • 1 cup brown onion, finely chopped
  • 4 garlic cloves, minced

Seasonings & Sauces

  • 2 tablespoons olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon chili pepper flakes (adjust to taste)
  • ½ tablespoon Italian seasoning
  • 400g canned chopped tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 chicken stock cube, crumbled
  • Salt and pepper to taste

Liquids

  • 600 ml water

Cheese & Herbs

  • ½ cup parmesan cheese, grated
  • 10 g fresh basil leaves, torn

Instructions

  1. Saute Aromatics: Heat 2 tablespoons of olive oil over medium heat in a large shallow pot or Dutch oven. Add the finely chopped onion and minced garlic. Sauté until the onions are soft, translucent, and the mixture is fragrant, about 3-5 minutes.
  2. Cook Ground Chicken: Add the ground chicken to the pot and cook until it is no longer pink, breaking it apart with a wooden spoon to create crumbles. This should take about 5-7 minutes.
  3. Season the Meat: Season the cooked chicken with salt, freshly ground black pepper, chili pepper flakes, and Italian seasoning. Stir in the tomato paste and cook for about 1 minute to deepen the flavor.
  4. Add Tomato Base and Liquids: Stir in the canned chopped tomatoes and Worcestershire sauce. Crumble in the chicken stock cube, then add the dried pasta and pour in 600 ml of water, ensuring the water level just covers the pasta. Stir thoroughly to combine all ingredients.
  5. Cook Pasta: Bring the mixture to a gentle boil. Reduce heat and simmer, stirring occasionally to prevent the pasta from sticking to the bottom. Cook until the pasta reaches al dente texture, approximately 8 to 10 minutes.
  6. Finish and Serve: Once the pasta is cooked, take the pot off the heat. Stir in the grated parmesan cheese and add torn fresh basil leaves. Mix well to combine all flavors. Serve immediately, optionally alongside garlic bread for a complete meal.
