These no-bake cheesecake bites are a festive and delicious holiday treat, combining creamy cheesecake with a hint of vanilla and white chocolate, coated in colorful candy melts and topped with fun sprinkles. Perfect for parties and easy to prepare without an oven.

Ingredients

Cheesecake Mixture

  • 8 oz cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips, melted
  • 1 cup crushed graham crackers or cookie crumbs
  • ½ cup whipped topping (Cool Whip), thawed

Coating and Decoration

  • Red and green melting chocolate or candy melts
  • Holiday sprinkles for decorating

Instructions

  1. Prepare the Cheesecake Mixture: Beat the softened cream cheese in a large bowl until creamy and smooth. Then add powdered sugar and vanilla extract, mixing well until fully incorporated.
  2. Melt the White Chocolate: Melt the white chocolate chips in short 20-second intervals in the microwave, stirring between each until smooth. Allow the melted chocolate to cool slightly before mixing it into the cream cheese mixture to prevent melting the mixture.
  3. Add the Crumbs and Whipped Topping: Stir in the crushed graham crackers, followed by gently folding in the thawed whipped topping until the mixture is well combined and fluffy.
  4. Chill and Shape: Refrigerate the combined mixture for 30 to 40 minutes to firm up. After chilling, scoop and roll the mixture into 1-inch balls. Place the balls on a parchment-lined baking sheet.
  5. Melt and Color the Coating: Melt red and green candy melts separately according to package instructions. Dip each cheesecake ball into the melted candy melts and place back on the parchment paper. Decorate with holiday sprinkles as desired. Allow coating to set before serving.

Notes

  • Ensure the cream cheese is fully softened for easy mixing and a smooth texture.
  • Let the melted white chocolate cool slightly before combining with the cream cheese to avoid melting the mixture.
  • Choose holiday-themed sprinkles to add a festive touch to your bites.
  • Use parchment paper to prevent the bites from sticking during chilling and decorating.
