Ingredients

Dry Ingredients

  • 2 3/4 cups (358g) all-purpose flour (measured correctly)
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Wet Ingredients

  • 1 cup (224g) unsalted butter, room temperature
  • 1 cup + 2 tbsp (233g) granulated sugar
  • 2 tbsp (28g) light brown sugar
  • 1 large egg
  • 2 tsp vanilla extract

Coloring and Decorations

  • Green, Orange and Purple gel icing color
  • Green, Orange and Purple sanding sugar (optional)
  • Edible eyeballs
  • M&Ms candies

Instructions

  1. Preheat Oven and Prepare Baking Sheets: Set your oven to 350°F (180°C). Line baking sheets with parchment paper or silicone baking mats and set them aside to be ready for the dough.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set this mixture aside for later.
  3. Cream Butter and Sugars: Using a large mixing bowl and a mixer on medium speed, beat the room temperature unsalted butter with granulated and brown sugars until the mixture is fluffy and lighter in color, approximately 2-3 minutes. This step is crucial to incorporate air and achieve the perfect texture.
  4. Add Egg and Vanilla: Crack in the large egg and mix until fully incorporated. Then add the vanilla extract and mix again until combined.
  5. Combine Dry Ingredients: Slowly add the flour mixture to the wet ingredients and mix just until combined. The dough should be thick and not sticky. Avoid overmixing to prevent tough cookies.
  6. Divide and Color Dough: Divide the dough evenly into three separate bowls. Add a small amount of green gel icing color to one bowl, orange to the second, and purple to the third. Mix each until the color is evenly distributed but avoid adding too much gel to prevent spreading.
  7. Form Cookie Balls: Using approximately 1 1/2 tablespoons of dough, roll into balls. Optionally, roll each ball into colored sanding sugar to coat, although this may make candy decoration adhesion more difficult.
  8. Bake Cookies: Place the cookie balls on the prepared baking sheets spaced evenly. Bake for 7-8 minutes until centers look soft and edges are just starting to turn golden. Remove promptly to prevent overbaking.
  9. Add Decorations: Immediately after removing cookies from the oven, press edible eyeballs and M&Ms into the warm cookies to secure them as the cookies cool.
  10. Cool Cookies: Allow the cookies to cool on the baking sheets for 4-5 minutes, then transfer to wire racks to cool completely before serving or storing.

Notes

  • Do not overmix the dough after adding flour to maintain a tender texture.
  • Use gel icing colors sparingly to avoid adding extra moisture which causes the cookies to spread too much.
  • Sanding sugar is optional; it adds sparkle but can make decorations less sticky.
  • Press candies and eyeballs onto cookies while still warm to help them adhere better.
  • Cookies are best stored in an airtight container to maintain freshness.
