This Mixed Berry Icebox Cake is a delightful no-bake dessert featuring layers of creamy cheesecake-flavored pudding, milk-softened Golden Oreos, fresh strawberries, blueberries, and whipped cream. Ingredients

Pudding

  • 2 (3.4 oz) packages cheesecake flavored pudding
  • 4 1/2 cups (1080 ml) milk, divided

Cookies

  • 2 (15.25 oz) boxes Golden Oreos

Fruits

  • 1 lb strawberries, washed and sliced
  • 1 pint blueberries, plus more for decorating

Whipped Topping

  • 12 oz Cool Whip, or 1 1/2 recipes of Homemade Whipped Cream

Instructions

  1. Prepare the pudding: Make both packages of cheesecake flavored pudding according to package directions, using 4 cups of milk (2 cups per pudding package). Set the pudding aside to thicken.
  2. Soften the Oreos: Pour the remaining 1/2 cup milk into a small bowl. Quickly dip each Golden Oreo into the milk to soften slightly, and then arrange a single layer of these Oreos on the bottom of a 9×13-inch pan.
  3. Layer pudding: Spread half of the prepared cheesecake pudding evenly over the softened Oreo layer in the pan.
  4. Add strawberry layer: Arrange a single layer of sliced strawberries on top of the pudding, reserving some slices for decorating later.
  5. Spread whipped cream: Evenly spread half of the Cool Whip or homemade whipped cream over the strawberry layer.
  6. Second Oreo layer: Dip the remaining Oreos briefly in milk and place them on top of the whipped cream in a single layer.
  7. Layer remaining pudding: Spread the remaining cheesecake pudding over the second Oreo layer.
  8. Add blueberries: Evenly layer the blueberries on top of the pudding, saving some for decoration later.
  9. Top with whipped cream: Spread the remaining whipped cream evenly over the blueberry layer.
  10. Decorate: Garnish the top of the cake with the reserved strawberry slices and extra blueberries for a beautiful presentation.
  11. Chill before serving: Refrigerate the cake for about 2–3 hours. This chilling time allows the Oreos to soften for easy slicing and the flavors to meld.
