Ingredients

Cabbage Wedges

  • 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)
  • 2 tbsp softened butter
  • 1 tbsp miso paste

Breadcrumb Topping

  • 1 tbsp butter
  • 26g (1/4 cup) panko breadcrumbs
  • 1/4 tsp garlic powder
  • 1 tbsp chopped parsley (optional)

Instructions

  1. Preheat Oven and Prepare Cabbage: Preheat the oven to 200°C (400°F). Cut the sweetheart cabbage into four wedges, keeping the base intact to hold the leaves together.
  2. Mix and Brush Miso Butter: In a bowl, combine 2 tablespoons of softened butter with 1 tablespoon of miso paste until well blended. Brush this mixture evenly over all sides of the cabbage wedges, including the base, ensuring maximum flavor coverage.
  3. Roast the Cabbage: Place the cabbage wedges flat on a baking sheet and roast in the preheated oven for 30 to 35 minutes. The cabbage should develop a nice char on the outside while remaining slightly crispy inside.
  4. Prepare the Breadcrumb Topping: While the cabbage roasts, melt the remaining 1 tablespoon of butter in a pan over medium heat. Add the panko breadcrumbs and garlic powder, stirring continuously to toast them evenly. Cook until the breadcrumbs turn golden brown, then promptly remove from heat to prevent burning.
  5. Serve with Breadcrumbs and Parsley: Once the cabbage is roasted, sprinkle the toasted garlic breadcrumbs over the wedges. Optionally, garnish with chopped parsley for a fresh, vibrant touch before serving.
