Ingredients

For the Filling and Topping

  • 2 sheets puff pastry, thawed according to package instructions

  • 1 teaspoon water

Instructions

  1. Caramelize Onions: Melt the butter and olive oil in a skillet over medium heat. Add the sliced onions, season with salt and pepper, and cook while stirring frequently for up to 20 minutes until the onions become tender and golden brown. Remove from heat and set aside.
  2. Preheat Oven: Preheat your oven to 425°F (220°C) to prepare for baking the tarts.
  3. Prepare Pastry Circles: Using a round cookie cutter, cut circles out of the thawed puff pastry sheets. Arrange the circles on a baking sheet lined with parchment paper to prevent sticking.
  4. Apply Egg Wash: Beat the egg with 1 teaspoon of water to create an egg wash. Brush the egg wash onto each pastry circle to give them a golden sheen when baked.
  5. Assemble Tarts: Place a thin tomato slice in the center of each pastry circle. Layer the caramelized onions on top of the tomato slices, then sprinkle evenly with shredded pepperjack cheese.
  6. Bake the Tarts: Bake the assembled tarts in the preheated oven for 16 to 20 minutes or until the puff pastry is puffy and golden brown and the cheese has melted and turned golden.
