Million Dollar Ravioli Soup is a rich and comforting Italian-inspired dish featuring savory ground Italian sausage, tender cheese ravioli, and a flavorful tomato broth enriched with cream and parmesan cheese. This hearty soup is perfect for a cozy meal and comes together quickly in about 30 minutes.

Ingredients

Meat and Aromatics

  • 1 pound ground Italian sausage
  • ½ cup diced onion
  • 2 cloves garlic, minced

Soup Base

  • 1 tablespoon Italian seasoning
  • 3 tablespoons tomato paste
  • 4 cups chicken broth
  • 1 (28-ounce) can crushed tomatoes

Main Components

  • 1 (25-ounce) bag frozen cheese ravioli
  • ½ cup heavy cream
  • ½ cup grated parmesan cheese, plus more for sprinkling
  • 2 cups baby spinach

For Serving

  • Ricotta cheese (for serving)

Instructions

  1. Cook Italian sausage and onion: In a large pot over medium-high heat, add the ground Italian sausage and diced onion. Cook for 5-7 minutes until the sausage is no longer pink and the onion starts to soften.
  2. Add garlic: Stir in the minced garlic and cook for an additional 1 minute to release its aroma.
  3. Add tomato paste: Mix in the tomato paste, continue stirring, and cook for about 1 minute to deepen the flavor.
  4. Simmer broth and tomatoes: Pour in the chicken broth, crushed tomatoes, and sprinkle the Italian seasoning. Cover the pot and bring to a simmer, then cook uncovered until the liquid slightly reduces, about 10 minutes.
  5. Add ravioli and finish soup: Stir in the frozen cheese ravioli, heavy cream, grated parmesan cheese, and baby spinach. Simmer for 2 more minutes until the ravioli is heated through and the spinach has wilted.
  6. Serve: Ladle the soup into bowls and add a dollop of ricotta cheese on top. Sprinkle extra parmesan cheese if desired before serving.

Notes

  • You can substitute Italian sausage with turkey sausage for a leaner option.
  • Fresh ravioli can be used instead of frozen; adjust cooking time accordingly.
  • To make the soup gluten-free, use gluten-free ravioli and verify that the sausage contains no gluten additives.
  • Leftovers store well in the refrigerator for up to 3 days; reheat gently to avoid overcooking the ravioli.
  • Adding fresh basil or oregano can enhance the soup’s herbal flavors.
