Ingredients

Tomatoes

  • 3 cups cherry or grape tomatoes, halved

Marinade

  • 1 large garlic clove, finely grated
  • 3/4 teaspoon Kosher salt
  • 2 tablespoons minced fresh basil, mint, and/or parsley
  • 1/2 teaspoon dried Greek oregano
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons white wine vinegar

Instructions

  1. Season the tomatoes. Place the halved tomatoes in a mixing bowl. Add the finely grated garlic, kosher salt, fresh herbs (basil, mint, and/or parsley), dried Greek oregano, olive oil, and white wine vinegar. Use a spoon to toss everything together thoroughly, ensuring the tomatoes are evenly coated with the marinade.
  2. Marinate the tomatoes. Allow the tomatoes to marinate at room temperature for up to 1 hour to let the flavors meld. Alternatively, cover the bowl and refrigerate the tomatoes for up to 24 hours. If refrigerated, remove the tomatoes about 30 minutes before serving to bring them back to room temperature for optimal flavor and texture.
