Ingredients

Butternut Squash Fries

  • 2 packs (12 oz each) Trader Joe’s Butternut Squash Zig Zags
  • 1 Tablespoon Olive Oil (for tossing)
  • 12 pinches Kosher Salt

Burger Beef

  • 1 teaspoon Olive Oil (for cooking)
  • 1 pound Extra Lean Ground Beef
  • 1 Tablespoon Trader Joe’s Onion Salt (or similar seasoning blend)
  • 1 Tablespoon Worcestershire Sauce
  • ¼ cup Beef Broth or Water

Burger Sauce

  • ¼ cup Reduced Sugar Ketchup
  • 2 Tablespoons Yellow Mustard
  • 2 Tablespoons Light Mayo
  • 12 Tablespoons Water (to thin as needed)

Toppings and Assembly

  • 8 oz Cherry Tomatoes (halved)
  • 4 cups Shredded Lettuce
  • ¼ cup Dill Pickles and Pepperoncini
  • 2 oz Reduced Fat Crumbled Feta (or your choice of cheese)

Instructions

  1. Prepare Butternut Squash Fries: Toss the butternut squash zig zags in 1 tablespoon of olive oil and sprinkle with kosher salt. Air fry at 375ºF for 15-20 minutes, shaking the basket occasionally to ensure even cooking. Alternatively, bake them on a parchment-lined sheet pan at 425ºF for 30-35 minutes until crisp and tender.
  2. Cook the Burger Beef: Heat 1 teaspoon of olive oil in a nonstick pan over medium heat. Once hot, add the ground beef without stirring and cook for 2-3 minutes to develop a browned crust. Flip and cook the other side similarly. Then break the beef into small bite-sized pieces with a spatula and continue cooking until fully done. Stir in Worcestershire sauce, onion salt, and beef broth or water, cooking until the liquid evaporates and the mixture is well combined.
  3. Make the Burger Sauce: In a small bowl, mix reduced sugar ketchup, yellow mustard, light mayo, and 1-2 tablespoons of water. Adjust the water to thin the sauce to your desired consistency.
  4. Assemble the Bowls: Divide shredded lettuce between two bowls. Top with roasted butternut squash fries, cooked burger beef, halved cherry tomatoes, dill pickles, pepperoncini, crumbled feta cheese, and drizzle the burger sauce over everything. Serve immediately.
