Ingredients

Chicken

  • 1 lb chicken breast, cut into very small bite-sized pieces

Flatbreads

  • 2 flatbreads (Stonefire flatbreads recommended)
  • ⅓ cup BBQ sauce, plus more for drizzling
  • 2 cups shredded mozzarella cheese
  • 1 red bell pepper, thinly sliced
  • small red onion, thinly sliced
  • ¼ cup chopped cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 400°F to prepare for baking the flatbread pizzas.
  2. Season the Chicken: In a bowl, season the diced chicken breast with smoked paprika, garlic powder, onion powder, salt, and black pepper until evenly coated for robust flavor.
  3. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken pieces and cook for 7-10 minutes, stirring occasionally, until fully cooked and browned.
  4. Prepare Flatbreads: Place the two flatbreads on a baking sheet, ready for topping.
