This hearty Life Changing Instant Pot Beef Stew combines tender chuck roast with fresh vegetables and a rich tomato-based broth, all cooked quickly under pressure for a flavorful, comforting meal perfect for any day of the week.

Ingredients

Meat and Vegetables

  • 2 lbs. beef chuck roast, fat trimmed, cut into 1–2-inch chunks
  • 1 medium onion, sliced thinly
  • 2 stalks celery, sliced diagonally in thick pieces
  • 6 carrots, sliced diagonally in thick pieces

Other Ingredients

  • 2 tablespoons small tapioca
  • 1/2 cup tomato juice
  • 2 teaspoons kosher salt
  • 1 tablespoon granulated sugar

Instructions

  1. Add Beef and Vegetables: Place the beef chunks, sliced onion, celery, and carrots directly into the Instant Pot, layering them evenly.
  2. Add Other Ingredients: Sprinkle the tapioca, kosher salt, and granulated sugar evenly over the beef and vegetables, then pour the tomato juice on top to add moisture and flavor.
  3. Cook in the Instant Pot: Secure the Instant Pot lid and select the stew or meat setting. Cook under high pressure for 35 minutes to ensure the beef becomes tender and the flavors meld together.
  4. Finish: After the cooking time ends, let the Instant Pot naturally release steam for about 10 minutes to allow the stew to settle. Then, release any remaining pressure manually. For an optional finishing step, brown the stew quickly in the oven to enhance the flavor and texture.

Notes

  • Small tapioca acts as a natural thickener for the stew, giving it a nice texture.
  • Natural release allows the meat to relax and results in a more tender stew.
  • For extra depth, you can finish the stew with a quick browning in a preheated 400°F oven for 10-15 minutes.
  • You can substitute tomato juice with beef broth or stock for a different flavor profile.
