Ideal for a family-friendly meal that comes together quickly and makes great use of leftovers.

Ingredients

Sauce and Base

  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups chicken broth
  • 1 cup half and half (or whole milk or heavy cream)
  • 1 teaspoon dried onion powder
  • 1 teaspoon dried garlic powder (or less, to taste)
  • 1/2 teaspoon dried thyme
  • salt & pepper (to taste)

Others

  • 16 oz frozen vegetable medley
  • 1/4 cup cream cheese
  • 3 cups cooked and diced turkey meat (or cooked chicken/rotisserie chicken)
  • 1 pound egg noodles (cooked according to package directions)
  • 1 cup shredded cheese (mix of sharp cheddar and mozzarella recommended)

Instructions

  1. Prep: Heat the oven to 375°F (190°C) and lightly grease a deep 9×13 inch casserole dish to prevent sticking and ensure easy cleanup.
  2. Make Sauce: Melt the butter in a large, deep skillet over medium heat. Stir in the flour until the mixture is smooth and forms a roux. Gradually whisk in the chicken broth and half-and-half, continuing to whisk until the sauce thickens and becomes creamy. Season with dried onion powder, garlic powder, dried thyme, salt, and pepper to taste. Stir in the diced turkey, frozen vegetable medley, and cream cheese until the cheese melts and everything is evenly combined. Finally, fold in the cooked egg noodles to coat them well with the sauce mixture.
  3. Assemble and Bake: Transfer the noodle mixture into the prepared casserole dish. Evenly sprinkle the shredded cheese over the top. Bake uncovered in the preheated oven for 20-30 minutes, or until the cheese has fully melted, the casserole is bubbly, and the top is lightly browned.

Notes

  • You can substitute turkey with cooked chicken or rotisserie chicken as desired.
  • For a richer flavor, use heavy cream instead of half and half or milk.
  • Feel free to customize the frozen vegetable medley based on your preference or seasonal availability.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Using sharp cheddar adds a nice tangy flavor, while mozzarella ensures a gooey, melty texture.
