Delicious and visually appealing lasagna roll ups made with tender lasagna noodles filled with a flavorful mixture of ricotta, mozzarella, parmesan cheeses, and optionally ground beef or Italian sausage. Covered in marinara sauce and baked to perfection with a golden bubbly cheese topping, this dish is perfect for a comforting family dinner.

Ingredients

Lasagna and Sauce

  • 12 lasagna noodles (cooked according to package directions, al dente)
  • 2 cups marinara sauce
  • Salt and pepper to taste

Cheese and Filling

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 teaspoons minced garlic
  • 2 tablespoons fresh basil, chopped (plus extra for garnish)
  • 1 teaspoon dried Italian seasoning

Optional Meat

  • 1 cup ground beef or Italian sausage (cooked, crumbled, and drained)

Topping

  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat and Cook Noodles: Preheat your oven to 375°F. Bring a large pot of water to a boil and cook lasagna noodles according to package instructions, but reduce the cooking time by 1-2 minutes to keep them al dente. Drain and lay noodles flat on a clean kitchen towel to prevent sticking.
  2. Prepare the Filling: In a large mixing bowl, combine ricotta cheese, 1 cup shredded mozzarella, grated parmesan, egg, minced garlic, chopped fresh basil, dried Italian seasoning, salt, and pepper. If using, add cooked, crumbled, and drained ground beef or Italian sausage. Mix thoroughly until well combined.
  3. Assemble Roll Ups: Pour 1 cup of marinara sauce evenly into the bottom of a 9×13 inch baking dish. Take one lasagna noodle and spread about 2-3 tablespoons of the cheese mixture evenly over the noodle. Roll up the noodle tightly from one end to the other. Place each roll seam side down in the baking dish. Repeat with remaining noodles and filling.
  4. Add Sauce and Cheese: Pour the remaining marinara sauce evenly over the lasagna roll ups. Sprinkle the remaining 1/2 cup grated mozzarella cheese over the top.
  5. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  6. Bake Uncovered: Remove the foil and bake for an additional 5 minutes, or until the cheese topping is golden brown and bubbly.
  7. Serve: Let the dish cool for a few minutes. Garnish with fresh basil and serve warm for a delightful meal.
